the only thing I don't get is that at the beggining of the fire and flames vid is that he doesn't use the strum thing...Is it possible to not use the strum or something cause i'm missing something here...

Yeah, I think they're called hammers of something. They are the notes the shine brightly, all you have to do is press the button for them.
